Recipe Review: Chickpeas and Balsamic Vinegar Bruschetta

So the Famous Amber Byrd, made these delicious appetizers for our family’s Easter celebration and they were so good, I had to make my own. She got the recipe from Real Simple and the only think I did differently was leave out the parsley in hopes that my picky boyfriend might like them.

(No luck! he doesn’t like chickpeas!) But it still worked out great because me and my bestie chowed down on these while hanging out one day. My thoughts after making the recipe is that its a lot to eat on your own and I think you’d do well to bring them to a party instead of single handedly trying to eat them solo! I’m still happy to have them in the fridge when I get the munchies.

I do have to admit that I have a pretty huge addiction to Crostinis. Last week I had the most delicious snack of crostinis with Sardines in Louisiana Hot Sauce. I found this product on sale at Ollies for 39 cents! Hot damn, I need to pick up some more because I could eat this at least once a week. Also, when I go camping I think I’ll always pack plain crostini because they can’t go stale (they are already pretty crunchy) and so dang good plain. Mmmm Mmmm Mmm!
