Peanut Butter Cheesecake Brownies with Chocolate Peanut Butter Sauce!

My co-worker loves cooking and is amazing and is always making delicious things for us at the office. This week it was her birthday and so I wanted to return the favor. The only trouble is, her favorite thing is peanut butter and I find most recipes with peanut butter either too difficult or too rich. I googled peanut butter desserts and ran across this article with recipes: 14 Decadent Peanut Butter Desserts got my attention. It suggested Chocolate Covered Peanut Butter Cheesecake Pops – but the prep time was a whopping4.5 hours. But the idea stuck with me. Peanut butter cheesecake sounds yummy. So I googled that and found this youtube video.

I no longer wanted to make cheesecake pops, but this recipe seemed simple enough. So I did it a little different and want to definitely recommend it now that I’ve tasted it!

So buy brownie mix, whatever you like and make brownies. I used an 8×8″ glass pan with dark chocolate fudgey brownies. ❤ Let it cool – I think I waited 30 minutes, then stuck it in the fridge for another 2 hours. You don’t want it too soft or crumbly. After the bottom of the dish is cool, get started on the next step.

Take     8 oz cream cheese softened
1/2 cup creamy peanut butter
3/8 cup of sugar
2 eggs                                    and mix together. I used a blender and following the videos bidding did the eggs last, one egg at a time. Watch the video if you want, not rocket science.
Now take half your brownies and cut them into 1″ cubes and add them to the cream cheese batter. Put the other half aside for later. Use a spoon to gently mix and then I sprayed the same glass pan with cooking spray and put the new batter right back in. Cook at 300* for 5 minutes. I was afraid to overcook it, but the video recommends 35-45, so know your stove and use good judgment. My final product was browned on top. I also let it cook completely (another 2 hours in the fridge) and cut into 16 squares. I also cut up the remaining brownie and decoratively pieced it with the cheesecake to get a  chess piece like design.

Now in a microwave safe measuring cup, put      3/4 cup semi-sweet chocolate chips
1/4 cup whipping cream
1/3 cup creamy peanut butter      and microwave on high for about 35-45 seconds until mixture can be stirred smooth and all chocolate chips are melted. Take the chocolate peanut butter sauce and drizzle on the the brownie/cheesecake pieces and enjoy!!!
