So EatingWell.com had a recipe for Skillet Gnocchi with Chard & White Beans. I didn’t think Collin would like it, because it has beans and swiss chard, but I added chicken to their recipe and hoped the cheese and delicious gnocchi would make him forget the healthier parts. To my happy surprise, it taste great and makes lots of food, so we have lunch for tomorrow! Its a really simple to make and you can just keep using the same skillet to make all the parts. I just cooked the gnocchi, then the chicken – putting both aside while I cooked the veggies according to the recipe. I recommend everybody give this recipe a try!
And just to blog a little on the side, Yesterday was day 2 of following Melissa Bender’s Year of exercises. All you do is 30 minutes of cardio. I ran for 30 minutes on 5.5, taking only 2 1minute breaks during this workout. Each break, I’d up the incline as a small punishment for having to take a breather. So I ran for 32 minutes total and as a cool down I walked a small bit more to hit the full 3miles, then I stretched on the precor machine (I could make love to that wonderful device. It pulls me into the best positions.)
