Dinner Last Night! Honey Dijon Salmon, Goat Cheese stuffed Zucchini Rolls and Nutella Poptarts

Recipe Review Round up! We cooked for our mom last night and were really happy with how it all came together!

So the Salmon was a tried and true recipe we’ve been making for years for Men’s Health. This Honey Dijon Salmon recipe recommends Parmesan Asparagus as the side, but we had that earlier in the week, so I scoured Pintrest and found a Russian recipe of Zucchini stuffed with Feta – haha and I couldn’t figure out how to translate it so had to search more and found this beauty, Zucchini Rolls with Herbed Goat Cheese. We switched the raisins to cranberries and I cut out the pine nuts because I’m not very familiar with them and didn’t want to be too experimental (maybe next time?). On the side we had a simple mozzarella and tomato salad with olive oil and balsamic vinegar.  Oh so delicious!

Not an expensive meal for three. The salmon fillets was $11 and the goats cheese was $10, but most everything else you probably have at home plus a few fresh veggies you need to pick up. I doubled the zucchini recipe because once you wrap them up, it looks like a smaller portion then you’d hope for how great it tastes.

Leave no delicious morsel behind!!!!!!

For dessert, we got spoiled with Strawberry Nutella Poptarts!!

We were promised they were easy to make and they were delicious. And the scraps of dough our mumsie turned into pie crust hearts are so darn good, that should be added to the recipe! Its a very tasty recommend that I’m just we’ll try ourselves sometime soon!
